With time (and this could be decades with patient cellaring), the wine will mellow and flesh out well with lemon curd and toast characters, yet the faint core of tight acidity will keep the wine refreshing to drink...

Hunter Valley, NSW. A brilliant light yellow/green in colour, this wine has a generosity of fruit not usually expected in Hunter Semillon. It displays distinctive tropical aromas of passionfruit and orange blossom. Thai spices and lanolin dance around the glass, and are kept in check by a linear, lime like focus. The palate offers a pleasing generosity with ripe pear and lemon/melon fruit, and a lengthy, subliminally taut acidity providing a pleasing freshness to the finish...

Naoussa, Greece. ATMA White is a blend of 70% Xinomavro and 30% Malagouzia. The Xinomavro is from Apostolos’ own biodynamic vineyards and represent the juice from the youngest vines that have recently been planted. The Malagouzia is from the Fytia Village of Naoussa, where the altitude ranges from 500-600m above sea level...

Has a lightly viscous feel, but keeps itself neat and trim through the mouth with clean acidity, a subtle flintiness and spicy dry lemon tinged finish.
