Shiraz

Adelaide Hills, South Australia. This Syrah was picked from a vineyard in Forreston in the Adelaide Hills. It was picked early to create a light style. Around 40% whole bunches were included in the ferment to give added spice and lightness. The cap was gently pumped over twice daily for the duration of the wild ferment. After an extended ferment the pomace was pressed to seasoned large format french barrels. After 9 months the wine was racked, and sent directly to bottle without fining or filtration...

The palate is smooth and full with juicy red berries, gentle herbs and spice, and all well supported by excellent structure, a juicy acidity with a long, gentle finish. Perfectly matched to rare sirloin steak or a crispy pan-grilled lamb cutlet. Age till 2030...

Limestone Coast and Langehorne Creek, South Australia. Tasting notes: Vibrant purple hues with a deep ruby red core. The nose has masses of black fruits, red currants and spice which support hints of espresso and dried spice notes. On the palate, the wine is soft yet maintains expressions of cassis, anise and earthiness. Savoury, rich and yet balanced and restrained...

Heathcote, Victoria.  Beautifully perfumed bouquet with red and black fruits. The wine is pristine and poised with floral notes, gun flint and a minerality and purity  highlighting the finesse of this  cooler  vintage. The palate is seamless,  with lovely fruit texture and  finely grained tannins .  Long and powerful it will reach its peak in 2016 and drink well for 10 further years...
