5% whole bunch estate Pinot Noir, fermented with wild yeasts and left on skins post ferment until the tannins aligned. Matured for 12 months in a mix of barriques, hogsheads and puncheons with 10% new oak, and a further 3 months in stainless steel before bottling. The aromas are typical for a Sailor Seeks Horse Pinot, a subtle savoury note sings in tandem with Australian bushland and free-flowing creeks. The fruit is layered and complex, note of red and blue dripping with richness.

Tucked away in Tasmania’s Huon Valley, this small vineyard ranks among the southernmost in Australia. Owned and operated by Paul and Gilli Lipscombe, both highly experienced in viticulture and winemaking and it reflects their passion and expertise. Their impressive résumé includes a Jimmy Watson Trophy win for their work at Home Hill, where they’ve been crafting wines in recent years.
While searching for the perfect site to create Australia’s finest Pinot Noir and Chardonnay. That quest led them to this north-facing vineyard, ideally positioned to capture sunlight while being protected from the chilly south-westerly winds.
