50% barrel (American oak) fermentation and 50% stainless steel. Full MLF, maturation on lees with monthly batonnage. Blended prior to bottling.
The aromas of freshly baked brioche are captivating, giving way to yellow plum, bruléed orange slices and notes of Elderflower honey on the nose. The flavours on the palate are lemon rind, baked pear, Pink Lady apple with yeasty medium mouthfeel and a mineral dry finish.
