100% estate grown Grenache Noir, bush vines predominantly planted 2008. Hand-picked, destemmed and selectively sorted with 50% whole berries retained, tipped to open-top fermenters. Wild fermentation in stainless steel, gentle maceration on skins for approximately 15 - 21 days before pressing. 5 months maturation on lees in stainless steel and old French oak puncheons and foudre.
