PALATE
Cool earth, mulchy undergrowth, impressions of purple fruit and woody spice. An expressive wine with a structure suiting medium term ageing. A pure and vibrant expression of Australian Gamay.
VINIFICATION
Grown on the Estate vineyard and inspired by the best Cru Beaujolais, this is a Gamay to be taken seriously. Fermented in a large open topped concrete tank with 15% whole bunches. Destemmed berries were left uncrushed, allowing for gentle extraction and maintaining purity of fruit.
MATURATION
Aged in foudre and barrique for nine months.
