Why Pinot Gris? 
Pinot Gris, grown in a cool climate and treated right in the vineyard (with low yields, and hand picked) gives a wine with subtle stone fruit notes, along with pear and apple, and a touch of spice. It’s got lovely textured mouthfeel as well.
