WINEMAKING
experimentation and a desire to achieve excellence in a reserve Chardonnay style has led to the release of this wine.
 
TASTING NOTES
The nose shows plenty of lifted lemon citrus, complemented by the nutty complexity of nougat and cashew.  The palate shows purity of varietal fruit, supported by the structual complexity of fine French oak.  The generous flavour of this wine is balanced by a refreshing natural acidity, and the textural finish gives the wine great length and persistence.
 
The Chardonnay juice was fermented under cool conditions in a combination of new and old French oak barrels using wild and inoculated fermentation. The wine was matured on yeast lees for 10 months prior to blending.
 
CELLARING
The wine is delicious to drink now, however it will develop more complexity with age.
 
SERVE
Serve slightly chilled and pair with white meat such as pork, poultry and veal. The wine will also compliment oily fish such as salmon and tuna.
