Colour: Mid straw green with a fine gas bead and persistent mousse
Bouquet: The refreshing lemon citrus aromas of Semillon are in harmony with the complexity of the yeast aromas.
Palate: A very refreshing, easy drinking sparkling style wine, with generous citrus fruit flavours enhanced with creamy mouth filling characters and where the wine finishes soft, crisp and clean.
Vintage Conditions: Selected premium vineyards experienced ideal growing conditions producing wines of medium sugar and high flavours.
Cool nights providing ideal harvesting conditions.
Harvest Date: March 2010
Vinification and Maturation: Fruit was harvested and crushed directly to the press, where only the free run juice was selected. Juice was racked, warmed and fermented using specially selected aromatic yeast, chosen to accentuate the primary fruit characters. The blended wine was allowed to
undergo secondary fermentation in tank to obtain the gas effervescence and yeast complexity then sitting on yeast lees for a fur ther extended period to add further creaminess, complexity and long finish.
Serving Suggestion: The perfect aperitif on it's own or enjoy with fresh fruits or seafood.
