Tasting Notes

Colour: Dark black impenetrable core with deep red to purple hues.
Nose: Aromas of black forest cake, red currants and blueberries bound from the glass. Spicy oak, with a hint of the alpine valley in the cool of the morning! Softened marshmallows and cherries appear with time as the wine opens up.
Palate: 2021 has been hailed from the outset as "the vintage of flavour” and this wine epitomizes that. Dense in weight, our latest version of Uncut is full bodied, filling the palate from front to back with flavours of dark cherries, blackberries and chocolate. Velvety and powdery tannins channel the wine’s focus to complete the journey we have all come to expect from Uncut shiraz.

Winemaking
Vineyard selection is critical with each vintage of Uncut. We select the sites that display consistent high quality, concentration and finesse. The vine age ranges from 20-50 years. Fermentation occurs naturally in open fermenters, pressing on skins once the fermentation is completed, which may take up to 20 days. Ageing occurs in 100% French oak barrels ranging in size from puncheons (500L) to barriques (225L) for 18 months maturation. As with all Gemtree Certified Organic Australia reds, minimal racking occurs in this time, so the wine can be aged on its lees, building mouthfeel and texture and allowing sulphur additions to be kept to a minimum to showcase the true character of the wine.
