Pemberton, Western Australia. This Shiraz offers up plenty of pleasing dark berry characters and some subtle earthy complexities, giving it more Rhone like characteristics than most other Australian Shiraz. It has a deep purple, red colour and rich, ripe aromas of black cherry, plum and soft spice. The palate is fleshy, full and is brimming with sweet fruit, spicy nuances and lovely gamey overtones. The tannins are generous but supple.

FOOD MATCHING Veal, duck, chicken or any other game or poultry dish.

CELLARING With careful cellaring, this wine has the cellaring potential for 20 years.

VITICULTURE AND TERROIR The Picardy site was specially selected in Pemberton for its high altitude and well drained loam soils. This is cool climate viticulture at its best. The vines are planted on a northerly facing slope for maximum exposure to sunlight. Vine age at time of harvest is 11 years.

VINIFICATION The vines are dry grown, cane pruned and handpicked, which in turn encourages low yields. In the winery the grapes are firstly destemmed, then transferred into small open fermenters to be hand plunged four times a day. This wine is then matured for 12 months in specially imported new to four year old small French oak barriques.
