Airlie Bank is a lightly-oaked, fruit-driven range produced from entirely Yarra Valley fruit. Classically cool-climate in nature these wines show strong varietal qualities. They are produced for everyday drinking or medium term cellaring.
Winemaking
The 2008 Airlie Bank Cabernet Sauvignon Merlot is produced from 100% Yarra Valley fruit. Grapes were de-stemmed and crushed separately into static ferment-ers. After approximately 10 days on skins the wines were pressed and racked to barrel. Maturation took place in new and seasoned French oak barrels for 12 months. The final blend of 75% Cabernet and 25% Merlot was blended prior to bottling.

Bouquet
Lifted aromas of blackcurrants, liquorice, plums and tobacco.
Palate
A medium bodied wine with soft integrated tannins and subtle oak. Varietals flavours of plum, blueberry and herbs.

An ideal wine with char-grilled lamb or beef
