Allandale
The vineyard is 17 acres of top quality grape varieties - Pinot Noir, Chardonnay, and Semillon. Allandale's winemaker, Bill Sneddon, believes in a traditional style of viticulture, where the vines are tended with utmost care to ensure only full-flavoured fruit is crushed. Other varieties are selectively purchased from various vignerons in the Hunter Valley and other areas such as Mudgee, Hilltops and McLaren Vale.
Tasting Notes
Hilltops is the region surrounding the township of Young in NSW. The warm days and cold nights experience in Hilltops favours the production of premium Cabernet Sauvignon and Shiraz. To extract maximum flavour and tannin, the grapes were fermented in our open fermenter and hand plunged for nine days prior to pressing. After 12 months in French and American oak barrels the wine is deep cherry in colour, with berry and coffee characters on the nose. The palate is full with a fine tannin structure, typical of this area. This wine will reward careful medium term cellaring and is best enjoyed with rich red meats.
