Mornington Peninsula, Victoria. All Kooyong and Port Phillip Estate wines are entirely domain grown, vinified and bottled.
 
The Port Phillip Estate vineyard was planted in 1987 and acquired by the Gjergja family in 2000. Located in Red Hill, the ten hectare site is planted to Pinot Noir, Chardonnay, Shiraz and Sauvignon Blanc, all on northerly and easterly-facing slopes.

This Rosé was made from Shiraz grapes grown at Port Phillip Estate and an additional parcel of Shiraz sourced from the Heathcote region.

Salasso means ‘bleeding the juice’ in Italian. The fruit was whole bunch pressed and fermented without yeast inoculation in a mix of old French oak barriques and concrete tanks. Once dry, the wine was left sur lie for several months prior to bottling.
