High Eden South Australia. This wine has been made with traditional methods with an artisan approach. 60% Pinot Noir and 40% Chardonnay was whole bunch pressed, fermented in old barrels, lees stirred and put through full malo latic fermentation. Prior to tirage 15% of the 2006 vintage sparkling wine still on it's lees was blended in.
Due to the percentage of Pinot Noir there is a pink tinge to the wines. delicate aromatics of ripe fruit, rose petal and fresh yeast abound. Typical of Mountadam there is tremendous depth of flavour. Fresh ripe quince, delicate strawberry and crisp granny smith apple are all evident in this fresh and crisp sparkling wine. The wine's appeal is further enhanced by aging on yeast lees whichs adds sublte complexity.
