THE FRUIT
The fruit for this wine is sourced from the premium regions of Adelaide Hills and Eden Valley in South Australia.

THE WINEMAKING
The fruit was de-stemmed and the whole berries were gently pressed to reduce the amount of phenolics extracted and keep the delicate fruit flavours to the fore. Temperatures for fermentation were controlled between 11 and 13 deg C, again to retain delicate flavours. The wine was left on lees for a month to add texture to the palate.

THE COMMENTS
The wine is pale gold with green hues. On the nose the wine shows ripe pears with subtle floral and strawberry notes. These aromas follow on to the palate, which predominately tastes of green pears and is finely balanced with creamy notes provided by the time spent on lees coupled with dry, crisp acidity.
