McLaren Vale, South Australia. Fruit was selected from a single vineyard located on black bay bisque soils halfway between Willunga and McLaren Vale. Straw with a slight pinky hue. Flavours of freshly cut Nashi pear with mineral overtones. Crisp, crunchy palate with good depth of flavours, well-balanced acidity and a lovely, long textured finish
Grapes were hand harvested to avoid skin contact. Then crushed and pressed using only the free run juice which was cold fermented with neutral yeast to ensure purity of varietal characters.
