Rutherglen, Victoria. Deep in colour with aromas of crushed berries and dried herbs, this is a classic shiraz. Richly flavoured with spicy plum, dark fruits and smooth vanilla and chocolate.
Shiraz is Australia's favourite red grape and a Rutherglen treasure. We are lucky enough to have very old vines, with all the intensity and depth of flavour that they bring. Shiraz is a pleasure to work with because of the way it carries flavours and aromas specific to the region, and even the vineyard block, and layers these on top of a base of rich, soft plummy fruit.
The fruit was fully destemmed and crushed, then fermented to dryness on skins at temperatures ranging from 24 to 30 degrees celcius. After pressing, the wine was matured with French and American oak. There was minimal fining and filtration before bottling.
Back in the Old World there is an assumption that the local wines and local foods go together. We are beginning to see those synergies develop here and one of the great matches is our Shiraz with locally reared Rutherglen Lamb.
