nose: dense mulberries dominate nose, with plums, spice and a hint of pepper, with cedary characters, from the quality French oak, in the background
palate: intensely flavoured, rich and powerful, yet still shows finesse and balance. Ripe plum fruit fills the front palate, the cedary French oak characters add to the fleshy mid palate. The back palate has a firm tannin structure, enhanced by a wonderful acid line. The finish is lively, fresh and not at all tough
winemaking: machine harvested at night, particularly important during such a warm year. Crushed then fermented in a 10 tonne fermenter. Inoculated ferment and pumped over three times a day. Pressed into 100% French oak, 30% new oak. Matured in oak for 18 months
