The Vineyards
In 1997, Andrew Nugent planted vineyards and an olive grove on 100 acres on Bird in Hand Road, Woodside. The road itself was named after the "Bird in Hand" gold mine that operated in the district in the 1850s.

Four hundred metres above sea level, the vineyards face north and boast deep, well drained red earth, formed from metamorphic rock.

To extend the winemaking range available to Bird in Hand, another vineyard in the famous wine-growing region of Clare has been aquired to provide fruit for world class Riesling and Shiraz.

The Clare Valley is perfectly suited to the production of world class Riesling. 
The hand-picked fruit is sourced from some of the highest altitude vineyards in the district.  The berries are harvested earlier to retain a higher natural acidity and then whole bunch pressed to extract only the purest juice.
 
Honeysuckle Riesling is extremely limited and made in a slightly sweeter style by stopping the fermentation early.  A long cool ferment retains the sweet floral aromas and delicate lime & mineral flavours.
 
This wine is made in a style that is best consumed while young, fresh and vibrant.  With bright acidity and low alcohol, it is a great wine to pair with spicy food.
